High Protein Green Bean Casserole

In the soft food stage and not sure what to bring to Thanksgiving? Don’t worry, I’ve got you covered. This high-protein version of green bean casserole is perfect for any holiday gathering.

Ingredients:
2 cans green beans
1/2 cup mushrooms
1/2 of an onion
1 tbsp garlic
1/3 cup crushed pork rinds
1/3 cup parmesan cheese
2 cups cottage cheese
Worcestershire sauce
Hot sauce

Preheat the oven to 350º

First, thinly slice the onion and chop your mushrooms into small pieces.

Over medium heat, cook the mushroom and onion until soft.

In a large bowl, combine the mushrooms, onion, green beans, cottage cheese, a splash of hot sauce, and a splash of worcestershire. You can also blend the cottage cheese before adding it if you hate the texture.

In a gallon bag, add the pork rinds and crush with a rolling pin to make a great carb-free and high-protein swap for fried onions.

Spread the green bean mixture into a baking dish and top with the pork rinds and parmesan cheese.

Finally, bake for ~30 minutes until cooked through and bubbling.
