This lamb stew is full of cozy, savory flavors Plus, it’s safe for the soft foods stage after bariatric surgery and contains 12 grams of protein per serving.
Ingredients:
16 oz ground lamb
1 cup carrot
1 cup onion
1 cup celery
16 oz peas
1 tbsp garlic
32 oz bone broth
1 can diced tomatoes
2 sprigs of thyme
2 bay leavesFirst, you’ll need to finely chop the carrot, onion, and celery. You can pulse them together in the food processor if you don’t want to chop them by hand.
Next, add the onion, carrot, celery, and ground lamb to a large pot over medium heat. Cook until your meat is browned and break up any large chunks.
Then, add in the herbs, garlic, peas, tomatoes, and bone broth. Bring to a boil, then reduce the heat and simmer for 20 minutes. Remove the herbs and enjoy!
Using equal amounts of peas to meat and choosing bone broth over stock increases the protein in this recipe. You should get about 12g of protein per cup, at just 175 calories.
