A little sweet, a little savory, and perfectly cozy Today, we’re making high-protein pumpkin soup, perfect for the liquid stage after bariatric surgery.

This recipe makes about 10 servings at $10, each serving with 9g of protein.

Ingredients:
1 onion
3 tbsp garlic
3 sprigs of thyme
2 sprigs of sage
1 tsp cumin
24 oz bone broth
16 oz cottage cheese
1 can pumpkin purée
1 can white beans
1 tbsp lemon juice

In a large pot over medium heat, cook the onion, thyme, sage, and garlic until translucent.

Next, add in the white beans, puréed pumpkin, cumin, bone broth, and lemon juice. Bring to a boil, then reduce the heat to low and simmer for 10 minutes.

In a blender, add in cottage cheese and the pumpkin soup base. Blend until smooth.
