It’s soup season, y’all Perfect time for my easy, high-protein roasted cauliflower soup. You can enjoy this recipe any time, but it is ideal for the liquid stage after bariatric surgery.
Ingredients:
1/2 cup onion
1/2 cup carrot
1/2 cup celery
1lb cauliflower florets
1 tbsp garlic
16 oz cottage cheese
32 oz bone broth
1 tbsp lemon juice
1 tbsp paprika
Splash of hot saucePreheat the oven to 450º
In a gallon bag, add the cauliflower florets, chopped onion, celery and carrots. Sprinkle in the paprika, some olive oil, garlic, salt and pepper. Close the bag and shake to evenly coat the veggies in oil and spices.
Spread out the vegetables on a greased, lined baking sheet. Place in the oven and roast for about 25 minutes.
Remove from the oven and add the vegetables, cottage cheese, lemon juice, hot sauce, and bone broth to a blender. Blend until smooth.
Protein Tip: By using cottage cheese and bone broth instead of potatoes, flour, and butter, we increase the protein in this from 3g per cup to 7g per cup (and significantly lower the carbs).
Transfer the blended mixture to a large pot on the stovetop. If you need to adjust the heat, acid, and thinness, now is the time to adjust with more hot sauce, lemon, or broth. Bring to a boil.
Drop the temperature to low, cover and simmer for about 20 minutes to deepen the flavors. Enjoy!
