This Shepherd’s pie is full of protein *and* cozy vibes It’s perfect for the soft foods stage after bariatric surgery. For just $20, this recipe makes up to 20 servings, each containing about 7 grams of protein.
Ingredients:
2 cups riced cauliflower
1 cup cottage cheese
1 cup lean ground beef
1 cup ground lamb
1/2 cup frozen peas
1/2 cup frozen carrots
1 cup diced onion
3/4 cup lima beans
2 cups bone broth
¼ cup almond flour
1 tsp each of oregano, cumin, coriander, garlic, rosemary, thyme
1/4 cup tomato paste
3 tbsp worcestershire
1/2 cup shredded parmesan cheese
Steam the riced cauliflower in the microwave.
In a food processor, blend the cauliflower and cottage cheese. Set this aside for later.
In a large pot over medium heat, sautee the chopped onions, peas, carrots, and beans. Then add the ground beef and lamb. Cook until browned.
Add the broth, tomato paste, worcestershire, and spices. Let simmer and reduce to deepen the flavor.
Spoon some of the liquid into a separate cup and add the almond flour to make a slurry. Then add this back to the pot once mixed.
Remove from heat and spread into a baking dish. Top with the cauliflower mixture and bake for 20 minutes at 425º. When there’s about 10 minutes left, sprinkle the parmesan on top.
