Ricotta Bake is an all-time favorite, especially during the transition to soft foods after bariatric surgery!
Italian Ricotta Bake:
8 ounces low-fat Ricotta cheese
1/2 cup grated Parmesan cheese
1 large egg, beaten
1 teaspoon Italian seasoning (or can use up to 1 tablespoon for more flavor)
Nonstick cooking spray
1/2 cup low-sugar marinara sauce (I used Muir Glen, another option I found is Rao’s)
1/2 cup low-fat mozzarella cheese1. Preheat oven to 450F.
2. In a medium bowl, mix the ricotta, Parmesan, egg, and Italian seasoning.
3. Spray 9x9 inch baking pan with cooking spray. Spread the ricotta mixture evenly in the pan.
4. Top the Ricotta mixture with mozzarella.
5. Bake for 20-25 minutes, or until the cheese is melted.Additional notes: Great for the soft food diet!
Makes 6 servings. 132 calories, 12gm protein, 2gm sugar, 4gm carbs per serving.
