This Bariatric Friendly Recipe is a favorite for many!
Spicy Roasted Chickpeas
2 (15-ounce) cans organic garbanzo beans (rinsed and drained)
1 1/2 tablespoons chili powder
1 tablespoon ground cumin
2 teaspoons ground cayenne powder
2 teaspoons garlic powder
2 teaspoons paprika (I used Smoked Paprika from local spice store in Deep Ellum called 1890 Marketplace)
1 teaspoon salt1. Preheat oven to 300F. Line baking sheet with aluminum foil.
2. In a large bowl, mix the beans, chili powder, cumin, cayenne, garlic powder, paprika, salt, and olive oil, coating the beans well.
3. Spread evenly on a baking sheet.
4. Bake for 30 minutes, and stir gently.
5. Bake for another 20 to 30 minutes, until hard and crunchy.Additional notes: You may need to bake longer, to get the crunchy consistency. I used Everything but the Elote seasoning from Trader Joe’s in one batch. You can mix and match your own seasonings.
Makes 8-10 servings. 7gm protein, 4gm total fat, 4gm sugar, and 144 calories per serving.
