Try this easy high protein recipe for lemon pepper dill chickpeas that you can eat when you’re in the soft stage after bariatric surgery. This one is vegetarian and packs 16g protein per cup.
Ingredients:
½ cup Onion
½ cup Celery
½ cup Carrot
3 Cloves Garlic
1 Lemon juiced and zested
¼ cup of Dill
1 tsp Black Pepper
½ cup Parmesan
8oz Cottage Cheese
2 cans of ChickpeasTo a pot over medium heat, add onion, celery, carrot, garlic and salt and pepper to taste.
Saute this until fragrant and soft. You can test to make sure it’s soft enough by seeing if it crushes easily with a wooden spoon.
In a food processor add the vegetables, dill and cottage cheese. Blend this until smooth, scraping down the sides as needed.
Return the mixture to the stove on low heat and add chickpeas, lemon zest, lemon juice, black pepper, and parmesan.
Cook until the chickpeas are soft enough to easily crush with the back of a spoon. Option here to blend this again if you’re in the pureed phase.
