Looking for luck in 2025? While recipes for Hoppin’ John date back to the 1840s, today’s take on black-eyed peas has 15g of protein and is safe for the soft food stage after bariatric surgery.
Ingredients:
2 cans black-eyed peas
1 cup onion
1 tbsp garlic
1 cup celery
1 cup bell pepper
12 oz bone broth
8 oz smoked turkey
1 tbsp Cajun spicesFirst, rough chop the bell pepper, celery, and onion. In Cajun cooking, this is called the Holy Trinity.
Next, add the trinity to a food processor and pulse until finely minced (not pureed).
Transfer to a large pan over medium heat, and add in the garlic and Cajun spices. Cook until fragrant.Now, add in the black-eyed peas, turkey, and bone broth. Cover and bring to boil, then drop to low heat and remove the lid. Let simmer for about 10 minutes while stirring occasionally. Enjoy!
