Post Bariatric Surgery Recipe: Chopped Italian Chicken Salad

You wanted my take on an Italian Sub? You got it!

If you love Italian subs, but you’re in the soft food phase after bariatric surgery, try my recipe for a simple high protein chopped Italian chicken salad.
(Honestly, this might be one of my best recipes yet. I can’t believe how good it turned out!)

Ingredients:
2 shredded chicken breasts
16 oz cottage cheese
¼ cup olives
¼ cup pepperoncini
½ cup red onion
½ cup tomatoes
½ cup mozzarella cheese
½ cup provolone cheese
2 oz salami
2 oz pepperoni
2 tbsp lemon juice
3 tbsp red wine vinegar
1 tsp mustard
1 tbsp garlic
1 tbsp oregano
Salt and pepper to taste

In your food processor, add the mozzarella, provolone, pepperoni, red onion, tomatoes, olives, and pepperoncini.

Pulse to chop into small diced pieces. Put this mixture into a bowl and set aside.
In the food processor, add cottage cheese, red wine vinegar, garlic, mustard, lemon juice, oregano, and salt and pepper to taste. Blend until smooth.

In a large bowl, add your shredded chicken, then add the Italian mixture and the cottage cheese mixture. Mix until well combined.
