Post Bariatric Surgery Recipe: Green Goddess Egg Salad

If you’re looking for a fresh springtime dish to eat when you’re in the soft foods stage after bariatric surgery, try my delicious recipe for green goddess egg salad.

Ingredients:

6 hard boiled eggs
8 oz Greek yogurt
2 tbsp mustard
Lemon juice
Garlic
Chili flakes
Red wine vinegar
3 cups of any herbs you like
I used: dill, mint, chives, green onion, parsley, tarragon, and basil

Add all of your herbs to a food processor. Then add garlic, chili flake, red wine vinegar, mustard, and lemon juice.

Process on high until finely chopped. Scrape down the sides of the food processor’s bowl with a spatula and add salt and pepper to taste.

Add the greek yogurt to the food processor and mix until smooth.

Now, if you like, you can adjust the herb mixture to suit your taste. I personally like to add more dill and green onion to bring out those flavors. If you decide to add more herbs at this step, blend again until smooth.

Last, add the hard boiled eggs and pulse to chop into small pieces and mix with the dressing.
