Post Bariatric Surgery Recipe: High Protein Mushroom Leek Soup

Try my recipe for creamy mushroom leek soup if you’re looking for something satisfying to eat when you’re in the liquid stage after bariatric surgery.

Ingredients:

1 lb mushrooms
2 leeks, trimmed and sliced
1 onion, chopped
A few cloves of garlic
3 tbsp of dill (or just a handful)
1 tsp of paprika or cayenne (use cayenne if you like it spicy )
32 oz chicken broth
16 oz Greek yogurt

In a large pot over medium heat, add olive oil, garlic, and onion. Heat until the onions are soft.

Add in the mushrooms and leeks. Cook while stirring occasionally until you have about ⅓ of the volume and the vegetables are soft.

Add in dill and paprika or cayenne. Stir in the spices.

Remove from heat and add to a blender, along with the chicken broth and the Greek yogurt.

Blend until smooth. You can add broth to make the soup thinner if you need to.

Remember, the soup should be thin enough to slide through a straw, even though you won’t be eating the soup with a straw.

Once the soup is thin enough, it’s ready. Enjoy!
