Here’s a simple recipe for a high protein pea soup you can eat when you’re in the liquid stage after bariatric surgery. A perfect recipe for Spring!
Ingredients:
Avocado oil
1 bag of frozen peas
1 onion, diced
A few cloves of garlic, minced
1 32 oz box of chicken broth
A handful of dill
1 cup cottage cheese
Salt and pepper to tasteOver medium heat, add avocado oil to a pot, followed by garlic and onion. Stir and let the onion and garlic soften.
Add peas and chicken broth and stir.
Add salt and pepper to taste.
Cover and bring to a boil, then drop to low heat and simmer for 10 minutes.
Turn off the heat. Blend until smooth using a stick blender or by transferring the soup to a traditional blender.
Add in the dill and cottage cheese.
Blend again until smooth. To get the right consistency for the liquid phase, the soup should be smooth enough to go through a straw. (You won’t be using a straw to eat this, but you get the idea.)
Once your soup is smooth enough, enjoy!
