Fresh, flavorful, & filling Try this take on niçoise salad, modified for the soft foods stage after bariatric surgery. Traditional salade niçoise is a French dish with tuna, potatoes, green beans, hard-boiled eggs, anchovies, olives, and capers. This version bumps up the protein and keeps things soft-food-friendly.
Ingredients:
1lb of boneless, skinless salmon (canned or fresh)
3 tbsp capers
3 boiled eggs
1/2 cup cherry tomatoes
1/4 cup red onion
1/4 cup Kalamata olives
1/4 cup green beans
1/4 cup lemon juice
1/4 cup of parsley
1 tbsp Dijon mustard
8 oz cottage cheeseFirst, steam your green beans. Set aside and let cool.
Next, add the tomatoes, olives, capers, eggs, parsley, onion, and green beans to your food processor. Pulse until finely chopped.
In a large bowl, mix together the cottage cheese, mustard, and lemon juice. Add S&P to taste. Then add in the salmon and the chopped mixture, stirring until everything is evenly distributed.
Tip: Taste as you go, and if you want a brighter flavor, add more lemon juice
