Sweet and spicy Try this high-protein Thai-inspired mango chicken salad during the soft food stage after bariatric surgery (or anytime – it’s delicious).
Ingredients:
1 cup mango
1/2 cup cilantro
1/4 cup mint
1 lb ground chicken
1 bell pepper
1 cup green onion
1 lime
8 oz Greek yogurt
1 tbsp fish sauce
1/2 tbsp sesame oil
1 tsp chili flakes
1 tbsp peanut or cashew butter
1 tbsp minced garlic
1 tbsp minced gingerTip: Many people have trouble with shredded chicken in the early stages after surgery. Try ground chicken if you’re struggling!
In a large pan over medium heat, add the chopped bell pepper and the ground chicken. Brown the chicken until cooked through, stirring to break up any large pieces. Once cooked, remove from heat and set aside to cool.
Next, in a small bowl add the garlic, ginger, lime juice, fish sauce, sesame oil, chili flakes, peanut butter, and greek yogurt. Stir until well mixed.
Finally, in a large bowl, combine the chicken, mango, green onion, mint, cilantro and the Thai yogurt mixture.
Plate and enjoy!
